Pinto Bean Soup

What is the best to eat on a rainy day like today? SOUP!! 

Pinto Bean Soup
2 cups Diced Ham
1 medium Onion
1 tbsp. Minced Garlic
1 tbsp. Honey
2 lbs. Pinto Beans
1/2 cup Brown Sugar
1 tbsp. Lemon Juice
8 cups Water

Cut up the ham (we used half of the ham that is in the picture above) and the onion.
Add and stir everything together in a crock pot.

Cook for about 8 hours on low.

Tortilla Salsa Casserole

So this was just something that me and my mother in law came up with and it turned out sooo good that we have had it a couple times now. It was so simple to make.

Tortilla Salsa Casserole
1 medium Onion
Shredded Mozzarella Cheese
Corn Tortillas
Lean Ground Turkey (I used 3 lbs.)
Fresh Salsa

Place a layer of tortillas on the bottom of a glass pan.
----------------------------------------------------------------
 Add cheese on top of the tortillas.
 --------------------------------------------------------------
Add browned meat on top of the cheese. I browned mine with onions.

Add salsa on top of the meat.
 ------------------------------------------------------------
Repeat the layering one more time. I put the cheese before the meat and on top of the salsa.

 Bake at 375 degrees for 30-40 minutes or until the cheese is melted how you want.

Gluten Free Bread/Rolls

I found this recipe on the web while searching for different recipes (that others say tasted good) for bread and I have fallen in LOVE with it. And so has the hubby! I bought all the flour and xanthan gum in bulk at our local WinCo and it has been a HUGE lifesaver!!

Gluten Free Bread/Rolls
2 tsp. Sugar
1 3/4 c Lukewarm Water
3 Large Eggs
1/4 c Butter or Margarine
1 1/4 c Water (yes, more water)
1 tsp. Gluten Free Vinegar
1/3 c. Sugar (yes, more sugar)
1 1/2 tsp. Salt
1 1/2 c Non-Fat Dry Milk (I used dried buttermilk)
2 c Rice Flour
2 c Tapioca Flour
3 1/2 tsp Xanthan Gum
1 1/2 Tbsp. Active Dry Yeast (2 packages)

Dissolve the 2 tsp. sugar in 1 3/4 lukewarm water. Sprinkle the yeast on the top and let sit for 10 minutes (until bubbly)

Sift together the 2 c rice flour, 2 c tapioca flour, 1/3 c sugar, 1 1/2 tsp. salt, 2/3 c dry milk, and 3 1/2 tsp xanthan gum.
Melt the butter/margarine and add it. Also add the 1 1/4 c cool water and 1 tsp. vinegar. Add the eggs. Then add the bowl that has the yeast on top and mix it all together.

 Beat it for 2 minutes with the mixer on a high speed. Place dough in well greased loaf pans and smooth on the tops with either a wet spatula or slightly wet fingers.

Allow dough to rise double in a warm place. This could take up to a hour and a half. I usually split mine into 4 mini loaf pans so that I can freeze 3 loafs and only have one out at a time.

Bake the loafs at 350 degrees for 30 minutes.
And tada! Here is the final product!! It tastes almost like normal bread and a heck of a lot better than any other gluten free bread I have ever had to make before! To make the rolls, I used well cleaned out tuna cans and they were the perfect size for sandwiches.

Chili Salsa

Oh my goodness!! This salsa has officially become my favorite salsa! And it is sooo easy to make!! Our family devours this in nothing flat! Once you try it, you will understand why!
Make sure to read the labels of everything you are buying (if you are strictly Gluten Free). Everything in the picture is labeled Gluten Free on the packaging!

Chili Salsa
4 med. Tomatoes (diced)
1 med. Onion (diced)
1 can Chopped Green Chili's
1 med. can/jar Taco Sauce
1 jar Ortega Green Chili Sauce
1 can Tomato Sauce
1/2 tsp. Pepper
1 tsp. Salt
1/2 - 1 tsp. Fresh Garlic

Add everything together in a large mixing bowl

Veggie Soup :)

Okay Everyone! My first recipe post!! I'm excited! This soup is so yummy and there is so much you can add to it to make it even more great!! We found this recipe here and we are all absolutely in LOVE with it! Here it is!
Gluten Free Veggie Soup
3-4 Washed Red Potatoes (chopped)
1-2 Washed Bakers Potatoes (chopped)
3 Washed Carrots (chopped)
1 White Onion (chopped)
1 Container of Broth (Beef, Chicken, or Vegetable)
1 Garlic Clove (I used minced garlic)
1-2c Celery (chopped)

Cut up all your veggies and put them all in a pot.

Add your broth to all the veggies. I used Pacific Natural Foods Beef Broth.

Bring everything to a boil. Boil on Medium heat for 20 minutes.

After the 20 minutes I usually taste one of the carrots to make sure that they are done all the way.
Serve and most importantly, ENJOY!!

This soup has been such a hit at our house that we have experimented with different things in it. We haven't tried the croutons yet in it (I am not a fan of bread in soup haha). We have added beef tips (to make it more like a stew). We have used chicken broth, and the next time I make it, I am going to use Vegetable Stock. :)

Welcome To The Blog World

Hello All! Thanks for visiting my blog. I have created this blog to help others with Celiac Disease or are Gluten Intolerant. My husband was diagnosed with Celiac Disease when we were dating 5 years ago and we have been learning everything we can ever since then. I have decided to start this blog because we are on the road to getting healthier (but still having sweets) and we have come across some very yummy recipes that we have been trying. I will post the recipes as we try them and hopefully you guys will like them also. And remember, just because something says that it is "Gluten Free", doesn't mean that it is gross! We have come across so much that is Gluten Free and you would have never known. :)  I'm sorry for the rambling. As I said, I am new at this and will improve as I go!
